Tasty and healthy treat for the whole family to enjoy! Have a look at my last blog on the benefits of adding linseeds to your daily diet.

Ingredients

1 cup oats

1 cup linseeds

6 dates

2 eggs

1 cup milk

1 cup apple puree (homemade)

1 teaspoon vanilla extract

2 apples

3 carrots

1 1/2 cups flour

2 teaspoons bicarb

1 teaspoon baking powder

2 teaspoons cinnamon

1 tablespoon brown sugar

Method 

  1. Preheat oven to 180 degrees
  2. In a food processor add the the oats and linseeds and blend until they are a fine flour.
  3. Add the milk, eggs, apple puree, vanilla and dates to the food processor and mix until well combined.
  4. In a separate bowl add the flour, bicarb, baking powder and cinnamon - mix together
  5. Peel and grate the apples and carrots.
  6. Mix the wet mixture from the food processor in with the dry ingredients.
  7. Fold in the grated apple and carrot.
  8. Add about a tablespoon and half to each muffin case
  9. Sprinkle brown sugar on top
  10. Bake for 15 minutes,
  11. Once cooked through remove from the oven and allow time to cool.

Note : they can be frozen once cooled completely.
