This jam is a healthy alternative to shop bought strawberry jam, but just as tasty.

 Ingredients

  • 500g fresh strawberries
  • 4 tablespoons water
  • 1 tablespoon honey
  • 2 tablespoons chia seeds

Method

  1. Remove the stems from the strawberries and cut in half.
  2. Add to a saucepan on low heat with two tablespoons on water.
  3. Keep stirring as the strawberries soften and break down. (if you would like a smoother jam, use a potato masher to mash out any lumps)
  4. Add the honey and stir until well combined.
  5. Bring the mixture to the boil then remove from the heat and stir in the chia seeds and remaining 2 tablespoons of water.
  6. Stir continuously until the chia seeds are well mixed.
  7. Leave to cool, stirring occasionally to keep the chia seeds from clumping together.
  8. Once cooled completely store in a glass jar in the fridge. Eat within 3days.
