Following on from my recipe on chicken bone broth, I would like to share a tasty vegetable soup recipe using the bone broth. This soup is packed full of vitamins and minerals to support your immune system.

Ingredients

1 tablespoon coconut oil

1 onion diced

3 stalks of celery sliced thinly

3 cloves of garlic crushed

2 carrots pealed and diced

1 sweet potato peeled and cubed

1 cup mixed frozen peas and sweetcorn

1L chicken bone broth (see my last recipe)

1 teaspoon mixed herbs

salt and pepper to taste

optional extras

shredded chicken

noodles

 

Method

Add coconut oil to a pot followed by the onions.

Cook until the onions are soft and then add the carrots and celery, cooking for about 5minutes

add the garlic and cook for another minute

Add the chicken bone broth followed by the potato.

Bring to the boil and then turn down to simmer for 20minutes

A few minutes before removing the pot from the stove and the sweetcorn and peas

Season with salt and pepper and enjoy!

Optional extras, you could add shredded chicken the same time as the potatoes and noodles at the same time as the sweetcorn and peas.
