Weeky Tip: Raw Almond Milk

Once you have tried this recipe - you will never wanted to go back to the expensive store bought versions. Almond milk is a great alternative to dairy and is delicious and creamy.
Ingredients
- 1 cup almonds
- pinch of himalayan salt
- a few drops stevia
Method
Soak the almonds in 2-3cups of water with a teaspoon of salt for at least 12hours. The almonds will expand absorbing water. Once they have had time to soak - wash them in clean water and throw away the water they were soaked in. Put the almonds into a blender (i used a nutri bullet) Add the salt, stevia and 2 cups of water. Blend for a couple of minutes. You will end up with a creamy looking mixture with lots of small bits floating around. Some people prefer to have their almond milk like this, but i put it through a strainer to get out all the bits leaving with you with a smooth creamy almond milk.
Don’t throw away the left over paste after straining it. This can be dried out in the oven and used as almond flour!
